Daal Makhani

Dal makhani is famous North Indian dish. It is very rich, creamy, flavorful and mild spicy dal recipe. Tastes almost same as restaurant style dal makhani.

𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔 𝒀𝒐𝒖 𝑵𝒆𝒆𝒅!

Whole urad dal – 1 cup
Rajma – 1/4 cup
Bay leave – 2
Cinnamon stick – 3 inch
Turmeric powder – 1 tsp
Garlic cloves – 1
Butter – 5 tsp
Cumin seeds – 1 tsp
Green cardamom – 2
Green chili – 1
Onion – 1 cup
Ginger garlic paste – 1 tbsp
Tomato – 3 to 4
Red chili powder – 2 tbsp
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp
Garam masala – 1/2 tsp
Kasuri Methi
Fresh cream – 6 tbsp
Coriander leaves
Salt to taste
Cooking oil – 4 tbsp

𝐅𝐨𝐫 𝐓𝐚𝐝𝐤𝐚 :-

Ghee or butter – 1 tbsp
Garlic chopped – 1 tbsp
Red chili powder – 1 tbsp
Hing – 1/4 tbsp

𝑯𝒐𝒘 𝑻𝒐 𝑴𝒂𝒌𝒆 𝑫𝒂𝒂𝒍 𝑴𝒂𝒌𝒉𝒂𝒏𝒊?

1. To make Dal Makhani, you will take one cup of peeled urad dal. You have to soak this urad dal in water, and along with it you will take 1/4th cup of rajma. You will add water to it and soak it. If you want, you can also soak it in water overnight or if you do not have that much time, then you will soak it for 4-5 hours.

2. Now you will wash it thoroughly with water and then you have put it in the pressure cooker. Now you will put water in it. So here put one more cup of kidney beans. It is one fourth cup of water so we have to use five cups of water because it takes time for the lentils to cook so the water should not be dry so add more water.

  • Add one big black cardamom
  • Add one bay leaf,
  • A few of added cinnamon sticks
  • Put turmeric powder in 8-10 spoon
  • Add garlic cloves and
  • Small spoon of salt

3. Put the lid on the cooker and boil on high flame till 10-12 whistles. Urad dal takes time to cook, hence you turned off the gas after 10 whistles. Open the lid of the pressure cooker with a spoon and then check it once. If it is not cooked, then you will cook it for 3-4 whistles.

4. So, first of all what you will do is to mash half the completely and keep half the standing. Just keep in mind that the garlic which we have put in it. Because of this, its taste is even better so our dal is ready.

5. Now you move to the next process, for this you have to make tomato paste, you can also use readymade puree. So, you make such a paste of at least three tomatoes or four tomatoes. You have grinded the tomatoes.

6. Now let us move into the process of making Dal Makhani. For this, you will heat a pan, you will put one spoon of butter in it and along with it, add three to four spoons of oil.

7. When both get heated very well. Then you will put one spoon cumin in it. I am using Shahi cumin. It gives a very royal taste. Now you will add four cloves of chopped garlic in it. After cooking the garlic and cumin seeds for two minutes.

  • You will add one and a half teaspoon of cumin powder
  • One and a half teaspoon of coriander powder
  • One teaspoon of red chili
  • Then add two spoons of garam masala
  • Add one big spoon of gram flour
    Why I use gram flour because it has a very nice roasted flavor and a very nutty flavor.

8. You will cook it for two minutes on low flame, it looks absolutely good

  • Now you will add tomato puree to it
  • Now you will add salt in it so that the tomatoes get cooked properly
  • You will add coriander leaves in it
  • Added half a teaspoon of black pepper powder, Mix both well.

9. Then you add dal in it, when this dal gets mixed well with the spices, then we will add water to it. So here you will get four cups of water.

10. If you had added salt earlier also, then you have to add salt accordingly here. After adding salt, mix it well. Mix, you have added more water here because you have to cook it on low flame for at least 20 minutes.

11. let it cook on slow flame as much as you want. The more it cooks, the better its taste will be good.

12. Add Kasuri Methi powder is very good in it. After that, add 6 tablespoons of cream in it, add butter and coriander leaves in it, mix well.

13. Make a tadka of heat butter and put on a chopped garlic and add 1 tbsp of Hing and 1 tbsp of red chili powder in it and mix it little. Our dal makhani is ready.
